Mediterranean climate is tempered by the altitude of the area with short but harsh winters with snow episodes and warm summers r during the day and coo at nights so a facto that positively favors grapes l quality. The vineyards are located atan altitude about 600-900m above sea leve!. Agriculture with vessel training and loamy soils with good drainage. Parce ls protected by Sierra de las Cabras there is several flora and fauna species that favors nutrients incorporation, also natural yeasts that will intervene in the vin ification. Elaboration method is ve ry trad itional mixing destemmed grapes w ith 30% of whole bunches. Fermentation process is made in limestone tanks from a quarry near the winery with 2 daily pumpovers. Average maceration of 10 days. After pressing, wine goes to an oak foudre where alcoholic fermentati on ends and the malolacti c fermentati on takes place. Aging: 9 months i n French Barrel and 3 months in speci al limestone tank. After a sl ight clarification bottlng is made without filtering.
TASTING NOTES
Garnet red with a purple rim, very clean and bright. On the nose it is very powerful, with ripe black fruit thar reminds us blackberries and plums, on a spicy and mineral background. On the palate is potent with very fine tannins, hints of ripe black fruit, white pepper, esparto grass and scrubland.
INTERESTING INFORMATION
Caravaca de la Cruz is a land of history, culture and wine, embodied in the celebrations of the Caballos del vino and the festivities of the Santísima Vera Cruz. Legend has it (hence the tradition) that in the 13th century, the Knights Templar managed to bring wine on their horses to the castle of Caravaca to prevent the people from drinking poisoned water.
